I was born on the 14th November 1972 at 1.40pm during the busy midday lunch hour of my Parents Restaurant in the Chavaney Valley in the Rhone, Southern France.
My Early childhood
I spent large parts of childhood in the countryside of the Beaujolais region with Uncle and Auntie. I would climb the trees, make wooden tree houses and had an ambition to be a mechanic like my Uncle. I still fondly remember eating the small cakes "Madelines" from the local baker Julie and also my dislike of cauliflour. My Auntie Regine always made me taste all the food on the table.
From 10 years old
My Sister introduced me to horses in the Dauphine region in France and her husband introduced me to trekking and became my best friend. He was also a Chef and whenever I ate at his house he used to feed me like King with local dishes such as Cabri (Young Goat) from the local farm and numerous other local delicacies.
At 15 years
I used to meet my Father everyday after school on the doorstep of our house as he began heading off to his Restaurant. One day a waiter called in sick and the door of opportunity opened for me. For 3.80 Euros per hour my Father asked me to come along and help. I ended up going everyday progressing from waiter to preparing salads and at this moment it showed that I would become a Chef like my Father.
At 18 years
At 18 Years I had saved all my wages and lived my dream by purchasing my first motorbike and for the next ten years racing my bike was my passion.
